Blueberry Almond Oats


Happy Monday! Starting the week off with a delicious balanced breakfast packed with fiber, healthy fats, and micronutrients. I'll be honest, I've never been a HUGE fan of oatmeal...like it's good...sometimes I think it's great, but most of the time I crave something savory in the morning like eggs or smoked salmon on toast. Today I wanted to change things up!


Having a good variety of fruits and vegetables in the diet is beneficial. To put it simply, every color on your plate represents different micronutrients that have disease-fighting properties. This is why it's okay to switch up your favorite dishes and try something new!


I know many of us are busy at this time of year, so this recipe is great because it's quick and can even be made ahead of time if you mix the uncooked ingredients in an airtight container and store in the refrigerator!


With fiber from the oats, fats from the almond/peanut butter and nuts, and antioxidants from the blueberries, this oatmeal recipe will have you energized and ready to start your day.


Sometimes I add an egg on the side (not to the oatmeal...that would be low-key disgusting...) if I feel like I want more protein and to remain fuller for longer. You can also add a dollop of greek yogurt for the same effect.


Blueberry Almond Oats


Ingredients

- 1 serving oats, cooked in water according to package

- splash of milk (any kind)

- dash of salt

- 1 tbs peanutbutter

- drizzle of honey

- 1 handful of blueberries

- coconut flakes

- slivered almonds

- vanilla almond butter (as much as you'd like)


Directions

  1. Cook oatmeal according to package

  2. add milk, peanut butter, and honey to pan when oats are finished cooking

  3. add to bowl and top with desired toppings

  4. Enjoy!
