Almond Butter Date Bombs

As a busy nutrition student, I know how intense the organic chemistry study grind can be. I’ve spent hours at a time studying without a break only to feel exhausted and cranky afterwards, and sometimes all of that hard work results in a less-than-to-be-desired grade!

A quick, balanced, delicious snack can be the perfect fix when you’re in a pinch. You’ll feel energized and satisfied so you can get back to work! These stuffed dates almost taste like caramel candies…the texture of the frozen date is similar to chewy caramel; when stuffed with almond butter its just *chef’s kiss*.

My Almond Butter Date Bombs have 1.6 g dietary fiber (per date) and plenty of healthy fats (polyunsaturated and omega-3 fatty acids). Dates contain natural sugars which offer a source of quick energy accompanied by B vitamins, vitamins A and C, and many minerals, all of which contribute to mood, energy, and brain function.

Almond Butter Date Bombs

Ingredients

5 medjool dates, pitted

Vanilla almond butter (or almond butter + dash of vanilla extract + drop of maple syrup

1/2 cup chocolate chips + 1 tbsp butter or coconut oil

Crushed walnuts

Directions

Pit dates

Fill with almond butter and freeze for 30 minutes

Melt chocolate and butter or coconut oil over a double boiler until melted, then stir to homogenize. I had to add a dash of water to mine to make it liquid

Dunk your frozen dates

Immediately sprinkle with walnuts and freeze

Store for up to a week in the refrigerator for optimal texture.
